Angel Food Cake with Mocha Filling
Ingredients:
- 1 (4.5 ounce) box angel food cake mix
- 1 (4-serving) package chocolate pudding mix
- 2 teaspoons instant coffee powder
- 1 1/3 cups skim milk
- 1 (8-ounce) container frozen lite whipped topping
Directions:
Prepare angel food cake according to directions on package in a 10-inch tube pan. Invert and cool thoroughly. In saucepan, mix pudding mix and instant coffee. Prepare pudding according to directions on package using only 1 1/3 cups milk; cool. Beat until smooth and fold in half of whipped topping. Split cake in three layers with serrated knife. Spread half the just-prepared pudding mixture between the layers only. Then to remaining half of pudding mixture, add remaining half of whipped topping and frost sides and top of cake. Chill.
Yield: 12 servings. It sounds complicated but it is easy and very good.
