Crabmeat Au Gratin

Ingredients:
1 cup thinly sliced Green Onions
2 tablespoons finely chopped Fresh Parsley
6 tablespoons light Margarine
3 tablespoons Flour
Salt and Pepper to taste
1 1/2 cups Skim Milk
1 tablespoon Sherry
1 1/2 to 2 pounds Lump Crabmeat
1 cup shredded, reduced fat, sharp Cheddar Cheese

Directions:
In saucepan, saute green onions and parsley in margarine until tender.
Remove from heat and stir in flour. Salt and pepper to taste. Gradually add milk, stirring over low heat until mixture thickens. Remove pan from heat; add sherry. Gently fold in crabmeat. Place in casserole dish or individual ramekins. Sprinkly with cheese. Bake at 375 degrees for 10 to 15 minutes or until cheese is melted. Yield 6 to 8 servings.
