Crab Roll Ups

Ingredients:

  • 1/4 cup fat free mayonnaise
  • Salt and pepper to taste
  • 3 green onions, chopped
  • 1/2 cup shredded low fat Swiss cheese
  • 1/2 (4 ounce) can chopped green chilies, drained
  • 1 cup white crabmeat
  • 6 medium flour tortillas

Directions:

Combine mayonnaise, salt and pepper, green onions, Swiss cheese and chilies together in bowl. Fold in crabmeat. Soften tortillas in microwave for 30 seconds covered with wet paper towel. Place filling on one end of tortilla and roll up jelly roll style. Place rolled tortillas, seam side down, in microwave dish and cook for 1 minute. Cut each tortilla into 5 pieces. Serve warm. Yield: 30 roll ups.
