Crispy Oatmeal Cookies

Ingredients:

  • 1/2 cup light margarine
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1/2 cup molasses
  • 1 teaspoon vanilla2 egg whites
  • 3 cups flour
  • 1 teaspoon baking soda
  • 2 cups old fashioned oatmeal
  • 1 cup crisp rice cereal
  • 1/2 cup chopped pecans

Directions:

In mixing bowl, cream margarine with sugar and brown sugar until light and fluffy. Add molasses, vanilla and egg whites. Combine flour and baking soda; gradually add to creamed mixture, beating well. Stir in oatmeal, cereal and pecans, mixing well. Drop dough on a cookie sheet coated with no stick cooking spray. Bake at 350 degrees for 8 to 10 minutes. Yield: 5 dozen cookies.
