Crispy Oatmeal Cookies
Ingredients:
- 1/2 cup light margarine
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1/2 cup molasses
- 1 teaspoon vanilla2 egg whites
- 3 cups flour
- 1 teaspoon baking soda
- 2 cups old fashioned oatmeal
- 1 cup crisp rice cereal
- 1/2 cup chopped pecans
Directions:
In mixing bowl, cream margarine with sugar and brown sugar until light and
fluffy.
Add molasses, vanilla and egg whites. Combine flour and baking soda;
gradually add
to creamed mixture, beating well. Stir in oatmeal, cereal and pecans,
mixing well. Drop
dough on a cookie sheet coated with no stick cooking spray. Bake at 350
degrees for
8 to 10 minutes. Yield: 5 dozen cookies.
