Marinated Italian Tuna Salad
Ingredients:
- 2 ounces part-skim mozzarella cheese, cut into small cubes
- 2 (6 1/2 ounce) cans tuna in water
- 1 cup quartered cherry tomatoes
- 1 small red onion, cut into thin rings
- 2/3 cup chopped celery
- 2 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 1 1/2 teaspoons dried basil
- 1/4 teaspoon crushed red pepper flakes
- 1/8 teaspoon pepper
Directions:
In large bowl, combine cheese, tuna, tomatoes, onion and celery. In small bowl, mix together oil, vinegar, basil, red pepper flakes and pepper. Pour dressing over tuna mixture and toss gently to coat. Cover and refrigerate for at least one hour.
