Peanut Butter and Jelly Cookies
Ingredients:
- 1/2 cup packed brown sugar
- 1/4 cup natural creamy peanut butter
- 1/4 cup dark corn syrup
- 3 tablespoons butter
- 1 large egg
- 2 teaspoons vanilla
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- Cooking spray
- 1/4 cup grape or other flavored jelly or jam
Directions:
1. Child/Parent step: Gather all ingredients and utensils needed for the recipe.
2. Child/Parent step: Measure the brown sugar, peanut butter, corn syrup and butter. Beat at medium speed until blended.
3. Child/Parent step: Add the egg and beat well. Beat in vanilla.
4. Child/Parent step: Lightly spoon flour into dry measuring cups; level with a knife.
5. Child step: Combine flour, baking powder, baking soda and salt in a small mixing bowl and stir well.
6. Child/Parent step: Add flour mixture to sugar and beat well. Cover and freeze for 30 minutes or until firm. (Have child figure out when 30 minutes is up.)
7. Child step: Shape dough into 24 balls; roll in granulated sugar; Place balls 1 inch apart on baking sheet coated with cooking spray. Press thumb into center of each cookie, leaving an indentation. Spoon about a half teaspoon of jelly into the center of each cookie.
8. Parent step: Bake for 12 minutes or until lightly browned. Cool 2 minutes on cookie pan. Remove from pan and completely cool on wire rack.
