Frozen Pink Angel Food Cake
Ingredients:
- 1 (16-ounce) round angel food cake
- 1/2 gallon non-fat frozen vanilla yogurt
- 1 (6-ounce) can frozen concentrated pink lemonade, thawed
- 12 drops red food coloring
Directions:
Split angel food cake horizontally into three layers with serrated knife. Let yogurt soften until it can be easily mixed with lemonade and food coloring. (If you want a pinker icing, just add more food coloring.) Lay bottom layer of angel food cake on serving platter. Working quickly, ice layer and inside hole with yogurt mixture. Repeat with next layer making sure to ice hole in center. Ice filled cake with remaining yogurt. Immediately put in freezer. Yield: 16 servings.
Make ahead and serve when you need a light refreshing dessert.
