Potato Soup

Ingredients:

  • 6 cups peeled and sliced red potatoes
  • 4 cups sliced onions
  • 1 1/2 to 2 quarts water (just to cover potatoes and onions)
  • Salt and pepper to taste
  • 4 teaspoons powdered chicken broth or 5 bouillon cubes
  • 1 cup skim milk
  • 1 bunch green onions, finely sliced

Directions:

Bring potatoes and onions to boil in water. Reduce heat and simmer, partially covered, for 45 minutes. When potatoes are tender, transfer with onions and water to food processor in batches and process until smooth. Return to pot and add remaining ingredients except green onions, cooking until thoroughly heated. Top with green onions and serve. Yield: 12 servings.
