Shrimp and Feta with Pasta

Ingredients:

  • 1 1/2 pounds shrimp, cooked and peeled
  • 1/2 pound feta cheese, crumbled
  • 1 bunch green onions, chopped
  • 2 teaspoons dried oregano
  • 4 tomatoes, peeled, cored, and chopped
  • 6 black olives, thinly sliced
  • Salt and pepper to taste
  • 10 ounces fettuccine

Directions:

In large bowl, combine the shrimp, cheese, onions, oregano, tomatoes, olives salt and pepper to taste. Let stand at room temperature for at least one hour. Cook pasta according to directions on package omitting oil. Drain. Add pasta to shrimp mixture, tossing. Serve immediately.

Yeild: 6 to 8 servings.
