Shrimp Pasta Salad
Ingredients:
- 8 ounces tubular pasta (penne, ziti, etc.)
- 1 teaspoon garlic powder
- 2 pounds shrimp, cooked and peeled
- 1 (10 ounce) package frozen peas
- 1 red bell pepper, chopped
- 1/2 cup chopped red onion
Directions:
Cook pasta according to directions on package omitting salt and oil; drain. Toss with garlic powder. Combine remaining ingredients in bowl and addpasta. Pour Basil Dressing (see recipe below) over salad and toss thoroughly.
Yield: 8 to 10 servings
Basil Dressing
1 tablespoon dried basil
3 cloves garlic, minced
1/3 cup olive oil
3 tablespoons fresh lemon juice
Combine all ingredients and pour over shrimp pasta mixture.
