Tortellini Shrimp Salad
Tortellini Ingredients:
- 2 (8 ounce) packages tri-colored tortellini stuffed with Parmesan cheese
- 1 pound cooked shrimp, peeled
- 1/3 cup grated Romano cheese
- 4 green onions, finely sliced
- 1/3 cup chopped red bell pepper
- 1 tablespoon dried basil
Directions:
Cook tortellini according to directions on package omitting salt and oil. Drain well and cool slightly. In a large bowl, combine remaining ingredients and toss with Dressing (see recipe below). Serve or keep in refrigerator. Best when served at room temperature. Yield: 8 servings.
Dressing:
- 1/4 cup red wine vinegar
- 2 tablespoons water
- 1 tablespoon canola oil
- 1 tablespoon dried basil
- 1 teaspoon Dijon mustard
Combine all ingredients together.
