Tuna Salad
Ingredients:
2 (7 ounce) cans White Tuna, packed in water, drained
1 (11 ounce) can Mandarin Oranges, drained
1/4 pound fresh Mushrooms, sliced
1 (14 ounce) can Artichoke Hearts, drained and cut in half
1 cup sliced Water Chestnuts, drained
Directions:
Carefully combine all ingredients in large bowl. Toss with Dressing
(see recipe below). Serve immediately. Yield: 8 servings.
Dressing:
1/4 cup fat free Mayonnaise
1/4 cup non fat plain Yogurt
1 tablespoon Lemon Juice
2 teaspoons Sugar
1 bunch Green Onions, thinly sliced
Combine all ingredients together and fold into tuna mixture.
